I usually start making dinner before Sean gets home. I stand in our u-shaped kitchen, and dig around in the refrigerator and the cupboards, pulling out this and that. Tonight’s dinner will be easy: only a few ingredients, and plenty of time to cook, no need to rush. I fill a saucepan with water to boil, measure out lentils, rinse squash. The knife makes its thwack-scrape sound across the cutting board as I slice. I’m calmed by these things, more than I was by my hour of post-work yoga.

Sweet Potato Black Bean Enchiladas
I’ve made many enchiladas in my life, but I always make them the same way. There is usually chicken, and definitely refried beans. There is always cheese. And the enchilada sauce comes from a can. These are terrific enchiladas.
I’ve also cooked many sweet potatoes in my life. They are almost always roasted, either whole or cubed, tossed with oil and salt. They get stirred into rice, or baked in gratins, or mixed into soup. They find their way to salads. I love me some roasted sweet potatoes.
I have never thought to combine these things. But last weekend, I did. And I did not regret it. The enchilada became something wholly new, something a little bit healthier, and full of flavors I never thought I would find there. Sweet potatoes love enchiladas. They love beans and chiles. How have I kept them apart for so long?

Curried Lentils and Grilled Branzini
Sometimes I see a recipe somewhere and I think, “That looks awesome, I’m making it for dinner this week.” The ingredients go on the shopping list and I think I’m all set. Then the time comes to cook the meal and I can’t find the recipe anywhere, like it was a figment of my imagination. There are so many places I find recipes, so many ways they pop into my life every day, it can be like a wild goose chase trying to hunt down any one in particular. Lucky for me, this one was simple enough that I was able to re-construct it, or at lease a pretty good facsimile, with little trouble. But I still have no idea where I got the idea in the first place.

Lentil Stuffed Zucchini
I love stuffed vegetables. A humble green pepper or zucchini seems much more elegant when it’s hallowed out and filled with yumminess. And while it makes a lovely presentation, stuffed vegetables are generally very easy to make. These lentil-stuffed zucchini are a nice, light summer dinner, especially when paired with a green salad. I had hoped to find bigger zucchini, but it’s still early in the season, and these held a fair amount of filling, despite their petite size.

Orzo and Bean Salad with Sweet Potatoes
One thing that is really hard for me about life in Walla Walla is the lack of a Trader Joe’s within a 200 mile radius. Whenever I travel to Portland, or even California, I stock up and drag all my TJ’s loot back home with me. I even shipped a box of kitchen goodies home from San Diego this winter, and have been happily enjoying my Candy Cane Jo Jo’s since then. One thing I always pick up is a can or two of their Marinated Salad Beans. These beans are awesome for a quick weeknight dinner, and this salad is one of my new favorites. In fact, I love it so much that now that I’m out of Trader Joe’s Marinated Salad Beans, I’ve been working on making the same vinaigrette to marinate my own salad beans. I’ve also found a few other brands that are more widely carried, and they make a decent substitute, although I don’t think they’re quite as good.

Pasta with Sausage and Lentils
Today it is rainy and grey and cold in Walla Walla, and I think I have to accept that it is well and truly fall. That’s not so bad, though, because I still have a huge bowl of tomatoes on my kitchen counter, and also, I really love fall. It is my favorite season. The air is crisp, and usually smells a little like wood smoke. The clothes are fantastic, all sweaters and wool and light scarves. And the food, well. I love summer produce, but I really love fall food. Bring on the slow cooked meats and roasted squash and hearty, warm comfort food.

White Bean, Tomato, and Chard Salad
I never really thought to eat chard raw, but the stuff I’ve been getting from the CSA is so tender that last week, I decided to give it a shot. Admittedly, this isn’t entirely raw: The bean and tomato mixture was hot, and wilted the chard a bit when they were tossed together. But it still held onto some crunch, and with the addition of cabbage, this salad has a great combination of textures. And the flavor was pretty amazing. In fact, I hadn’t intended this to be a blog dinner. It was just a quick weeknight meal, thrown together from what was in my pantry, but I was so pleased with how it came out, I had to share.

Quinoa and Bean Salad
I must admit that quinoa and I have been slow to warm to each other. It sounded like the ideal food for a mostly vegetarian diet: It’s a grain and also a complete protein. [Updated: It’s not a grain! It’s actually a seed. Ah, research…] And it’s fast and easy to cook. But for some reason, the love just wasn’t there. This quinoa and bean salad, though, might have tipped the scales strongly in favor of quinoa. And it’s a perfect summer meal, as it involves very little actual cooking! I can’t wait to eat this again.

Rice and Beans and Collard Greens
I believe I’ve talked about rice and beans quite a lot here on this site. It’s one of my staple dishes: filling, cheap, and easy to make enough for lunch all week. And even better: It is very versatile. Just change up the herbs and spices you throw in the mix and you have a whole different dinner on your hands. Last week I got a bunch of collard greens in my CSA share, and as I thought about what to do with them, I realized a Cajun-style rice and beans dish might be in order. I originally thought of making some kind of jambalaya, but I’m not sure it’s quite right to call a dish jambalaya unless it contains shrimp and/or andouille sausage. I used beans instead of meat, and whether or not it’s properly jambalaya, it is pretty darn good.
