Curried Chicken Salad

This week Sean is out of town, and I am eating like a total single lady. By that I mean on the couch, surrounded by magazines and watching How I Met Your Mother. By that I also mean I’m eating super easy salads, for which most of the prep work was done Sunday night. This Curried Chicken Salad is a perfect example a of single lady dinner. It took me about 15 minutes to throw together, it’s simple and summery, and its served in endive leaves, for goodness sake.

I love Curried Chicken Salad because it is totally classic, but still a little unexpected. It’s easy, but seems kind of decadent. It can be varied in endless ways, or kept simple and basic. I had originally intended to eat this chicken salad wrapped in lettuce leaves, but I couldn’t find any with that good cup shape. However, the endive was perfect: It added just the right amount of bitter crunch. This salad is also great wrapped in a soft whole wheat or green spinach-y tortilla.

Tuna and White Bean Sandwiches

This past weekend was my birthday, and as usual, I spent a lot of time cooking. Slow-cooked pork seems to be something of a tradition, and this year, I made al pastor-style pork for a Mexican feast. It was crazy delicious, and I promise to tell you all about it once I’ve recovered a bit. But today, still reeling from a busy, adventurous birthday weekend, I wanted something easy, and I hit upon what might be my new favorite sandwich.

About a year ago I read about making tuna sandwiches with mashed cannellini beans instead of mayonnaise, and it sounded like an excellent alternative: a little lighter, maybe, and I can never say no to beans. But it took me awhile to get around to it, which is unfortunate, because it’s a perfect summer sandwich. I know, I know, tuna isn’t perhaps the safest thing to be eating, but I love it, mercury be damned. And on days like today, when my house is so hot and steamy I can barely move, it’s pretty nice not to have to get anywhere near the stove.

The Most Ultimate of Awesome Grilled Cheese Sandwiches

The Ultimate Grilled Cheese Sandwich

In honor of National Grilled Cheese Month, we decided we had to concoct the very best, most ultimate grilled cheese sandwich of all time. And we would have gotten away with it, too, if it weren’t for that pesky cast iron skillet! Actually, they were pretty awesome, despite sticking in the worst way to the pan, thus diminishing their prettiness for the camera. And while it might be possible for someone to create a more ultimate grilled cheese sandwich, I think it would be very difficult.

How does one grilled cheese sandwich end up more ultimate than another? We took our cue from a local Boston restaurant, Picco, which, instead of coating the bread with butter before grilling, coats each slice with a healthy dose of Mornay sauce. I have not actually had this famous grilled cheese, only read about it Boston Magazine’s January 2006 food issue, but as soon as I read it, I knew I’d have to try it. But that innovation was not enough. This sandwich would need something else to become ultimate, and that something else was…bacon!

Grilled Eggplant and Roasted Red Pepper Panini

Last night required another super speedy dinner plan: I had only twenty minutes until Gilmores. Yes, I am terribly addicted to the Gilmore Girls. Who would have thought it, right? I, queen of cynicism and snark, book-readin’ and CSPAN-watchin’, I watch the Gilmore Girls? A television show was sponsored by Focus on the Family? (Or so the rumor goes. Can anyone confirm this?) Yes, I like to thank my old housemates, Laura T and Julia, for sending me down the path to ruin, by introducing me to the wit and spark that is the Gilmores, oh those several years ago.

Point being that after having a drink with Mr. X and rushing home after said drink, I had only twenty minutes to assemble something edible. Well, these sandwiches were not just edible, they were delicious. I think they were both completely digested five minutes into the show (which was pretty moving, despite my severe disappointment with this entire seventh season).

Mini Croques-Monsieur

Mr. X had a brilliant Sunday morning breakfast idea for the leftover ham: Miniature Croques-Monsieur! Despite being a relentless francophile and ham lover, I had never actually had a croque-monsieur before. Now I am fully ready to acknowledge that this might be the most brilliant sandwich idea ever. My internet searching tells me that the croque-monsieur isn’t much different from the monte carlo, which I thought was the most disgusting sandwich I’d ever had, but maybe that’s only because I ate it at Bennigan’s.

Mr. X’s version was simple and perfect. And miniaturized, because everyone loves tiny food. Despite their tinyness, they certainly filled me up for the rest of the day. And convinced me that I shouldn’t eat anything but soup and carrot sticks for the rest of the week (which hasn’t been hard because I literally have $0 in my bank account until tomorrow). If you’re feeling indulgent some weekend morning, though, break out the baguette and cook yourself up some croques-monsieur. Then, walk around for the rest of the day with a bad french accent.
