Heidi Swanson’s Super Natural Every Day is one of these books. It’s just so lovely, and Heidi has a gift for thinking up original, creative vegetarian recipes that go beyond sauteed kale and tofu stir-fry. Even when I don’t follow her recipes exactly, I find so much inspiration just looking through this book. I probably do so at least once a week.

This tortellini salad is one example of how inspiring this book is. I love that all of her recipes encourage variation and substitution, based on what’s available for you. What she really encourages is playfulness in the kitchen, and a willingness to experiment. Heidi’s recipes often remind me that the best times in the kitchen are when you’re trying something new and untested, because frankly, even when things don’t turn out the way you expect, they almost never turn out inedible, and you usually learn something new. Food is fun and nourishing and satisfying even when it’s imperfect.

Sneaky Eggplant

All across the interwebs, my fellow food bloggers are talking about the onset of fall with that sense of reprieve and reverence that I remember well. This summer, people across the country were hit with record heat waves, and the cooler weather is being welcomed with open arms. Just this last weekend, we were in New York and were greeted with cool breezes and crisp morning dew. Then we got back to Oakland and landed at 8:30 pm in 78 degree weather. The summer we were kind of denied has suddenly appeared. It’s no 112 degree July, but wowza, it’s warm. And we are still being deluged with summer fruits and vegetables: eggplant, tomatoes, melons, peppers, and cucumbers.

The grilled portobello mushroom is ubiquitous. It’s a standard vegetarian burger substitute on many menus. I recently read a food magazine (Bon Appetit, perhaps?) in which an author begged to an end to the ever present portobello. I myself have had many grilled portobellos, and I’ve never found them too compelling. I hardly ever want to order such a thing in a restaurant, and if I’m at a barbecue, well, give me a burger. But for some reason this week, the idea for this portobello and corn salad dinner popped into my head and wouldn’t let go. I wanted the seemingly most overplayed thing you can put on a grill.

I love stuffed vegetables. A humble green pepper or zucchini seems much more elegant when it’s hallowed out and filled with yumminess. And while it makes a lovely presentation, stuffed vegetables are generally very easy to make. These lentil-stuffed zucchini are a nice, light summer dinner, especially when paired with a green salad. I had hoped to find bigger zucchini, but it’s still early in the season, and these held a fair amount of filling, despite their petite size.

Some of my long-time readers might see another risotto recipe posted here and sigh, thinking, “Doesn’t this girl ever get sick of talking about risotto?” The answer to that is no, I do not get sick of talking about risotto. Sure, it’s kind of the same recipe written again and again and again. But there are so many awesome variations on a theme, and I just want to share them all. This one, for instance, was just perfect for spring, and if you’re seeing the last of the spring peas at the market, I urge you to grab them up and get into the kitchen.

I’ve been loving all of the foodie shopping opportunities here in the Bay Area. I’m a bit of a grocery store junkie: whether it’s a big supermarket or a small gourmet boutique, I love browsing the shelves, looking for the unusual, the new, and the hard-to-find, seeking out good deals and inspiration. Oakland is full of great grocery stores: We’re only blocks from Whole Foods, and Trader Joe’s is right up the road. Berkeley Bowl is a heaven of wonderful smelling produce, and the Rockridge Market Hall brings together all of my favorite things (bread, fresh pasta, sustainably-produced meat, wine, coffee, the list goes on) under one roof. And let’s not even get started on the Farmers’ Markets.

One thing that is really hard for me about life in Walla Walla is the lack of a Trader Joe’s within a 200 mile radius. Whenever I travel to Portland, or even California, I stock up and drag all my TJ’s loot back home with me. I even shipped a box of kitchen goodies home from San Diego this winter, and have been happily enjoying my Candy Cane Jo Jo’s since then. One thing I always pick up is a can or two of their Marinated Salad Beans. These beans are awesome for a quick weeknight dinner, and this salad is one of my new favorites. In fact, I love it so much that now that I’m out of Trader Joe’s Marinated Salad Beans, I’ve been working on making the same vinaigrette to marinate my own salad beans. I’ve also found a few other brands that are more widely carried, and they make a decent substitute, although I don’t think they’re quite as good.

A few weeks ago, Matt of MattBites.com shared a simple little recipe that completely blew my mind, for these lovely vegetable crumbles. Vegetable crumbles! The name is so plain, and his single paragraph describing them is so quiet and unassuming. Oh, just vegetable crumbles. You know, simple. What?! No, to me this idea was almost revolutionary. I love, love, love it when a new culinary idea quietly appears in the course of my normal, daily reading, and this one refused to be shaken easily. Yes, a savory crumble. I had to try it.

Summer is unquestionably winding to a close. Of course, its official end came earlier this week, but the farmers markets are still full of tomatoes, I’m still getting fat bags of basil from my CSA, and the days, at least in Walla Walla, are still warm and sunny. However, the decided chill in my house in the mornings makes it clear I don’t have much longer to enjoy summer’s bounty. I’ve been on a canning and freezing binge this week, putting up the last of the produce to enjoy when the days are much shorter, but in the midst of that frenzy, I made this simple summery dinner of barley, crookneck and patty pan squash, and an improvised basil tomato pesto.

Quick Pickled Cabbage Salad

It took me a long time to become a fan of cabbage. In fact, most cruciferous vegetables were anathema to me as a young child, for their somewhat, um, gassy odor. Cabbage was nothing to me but the bitter, slightly wilted filler in salad bars, and the stinky, mayonnaise-clogged pile of coleslaw I avoided at picnics. I never realized you could cook cabbage, but my first taste of the vegetable braised, until it became silky smooth and almost sweet, was an eye-opener. These days, I’m starting to enjoy raw cabbage, but I still usually prefer it cooked until some of the harsh, raw flavor dissipates. However, summer is not the time for long, slow cooking, so yesterday, I decided to try something new. I decided to pickle.

There are a lot of recipes for pickled cabbage, and many of them looked very involved. Some involved long periods of salting and fermentation, but I wanted more fast and easy. This preparation isn’t fancy, and certainly some additional spices and complicated steps might result in something more complex and mind-blowing, but I am quite pleased with how it came out. And as part of a simple composed salad, it’s pretty spectacular.
