There is something about warmer weather that just calls out for us to start eating more healthy salads. They are cool and crunchy, and full of thing that make us feel better about ourselves going into those seasons-of-lesser-clothing. Well, some people go into seasons-of-lesser-clothing. I’ve been known to wear cardigans all through summer, because I’m a total weirdo. But I still want big, crunchy salads. Unfortunately, I think with salads I can occasionally feel a little stuck. What goes after lettuce? Which vegetables go well together? And when is fruit acceptable? Can I think of another salad dressing besides a basic vinaigrette? Sometimes I need some healthy salad inspiration. Do you?
I have made a few salads in my life, and many of them were big winners. If you need some salad inspiration, here are a few you might want to ponder. Try one this weekend as you get ready for it to be May already. MAY!
Corn and Black Bean Salad with Cumin Lime Vinaigrette – So easy. And hey, isn’t Cinco de Mayo coming up?
Potato Caesar Salad – Bringing together two classics in one. (Bonus: There is another salad recipe in this post! Two for one!)
Roasted Butternut Squash and Chickpea Salad – I’m actually pointing you to the lovely Orangette for this recipe, because it is her recipe, and it is super special.
Spinach and Clementine Salad – These ingredients were meant to be together, I swear it.
Quinoa and Bean Salad – For a super awesome protein boost
Wild Rice Salad with Peppers and Carrots – This one is a mad colorful treat. Hearty and crunchy and filling and good.
White Bean, Tomato, and Chard Salad – Hm. We got chard from our CSA this week. This salad might have to make a comeback.
Quick Pickled Cabbage Salad – For something a little different
Fig and Herb Salad – Light and incredibly flavorful. This one is great with a nice bowl of soup.
Tortellini and Avocado Salad– This salad makes me swoon. It is my absolute current favorite. I get weak in the knees, I tell ya.
Field Fresh Chopped Salad with Chicken – And if you need something a little meatier, this is a good one. Heck, it would be good without the meat, too. This is my Trader Joe’s imitation salad, and if you don’t care for any of the other ingredients, at least try this dressing. It’s special.
So many salads. You really have no excuse now. And neither do I. It’s totally time for big huge, healthy salads for dinner.
