In order to make up for my lazy soup post earlier, I decided to make applesauce. This was always a way for me to test out my new food mill without eating more potatoes. Plus, applesauce is still easy for a sicky, and there’s vitamins and stuff. Whooo vitamins!!! Er, ok.
I used to make applesauce when I was a kid using this recipe:
(Five gold stars and a cookie to anyone who can tell me what cookbook that is.)
I decided I would grown-up it up a little bit, but it was still easier than pie. Here’s what you do:
Applesauce
- 3-4 apples
- 3/4 c. water
- a little less than 1/4 c. sugar (brown or white)
- a dash of cinnamon
- a tiny pinch of all spice
- about 1-2 T. brandy
- about 1 T. honey
Core and cut the apples into 1 or 2 inch pieces.
You can peel them if you want to, but I like to leave the peels on because that’s where the good stuff is. Plus, they get pretty soft and yummy after the cookin.
Put everything into a saucepan on the stove, and cook it over medium heat for about 20-35 minutes. Then you can either mush it with a fork or a potato masher, or run it through a food mill. I did about half with a fork and half with a food mill, because I didn’t want it to be completely pureed. I like some chunks left in there.
That is all. Now you have applesauce. Can you believe how easy that was? Neither can I. Now I’m going back to the couch, to practice knitting and maybe watch HP4.
