The other night, after I finished writing up my portion of a group paper (who the heck invented the group paper, anyway? Can I torture him?), I decided it was time to get out the mixing bowls, turn on the oven, and cook something from my brand new cookbook: Baking: From My Home to Yours. Yes, I finally got my little hands on Dorie Greenspan’s beautiful book, the book Brilynn over at Jumbo Empanadas has been talking up forever. And I am so glad I did. This enormous tome is full of delicious looking things, but the first thing that caught my eye were these Coffee-Break Muffins.
There was something very satisfying and calming about mixing these up after my evening of writing and studying. The recipe is very simple and it took no time at all. You are basically just substituting brewed coffee for the milk in a muffin recipe. Of course, Dorie’s recipe called for instant espresso powder, but I don’t even know what that is, and the people at the grocery store didn’t either. No matter, they are delicious without. The taste of coffee might be a bit more subtle than Dorie intended, but I’ve been bringing one of these to school with me everyday this week, and I believe I get a little caffeine jolt every time I eat one.
I’m not going to supply anyone with a recipe today, because I didn’t modify it really at all from Dorie Greenspan’s recipe (minus leaving out the espresso powder). If you think they look tempting, you should know that they are moist and perfect and easy to make, and you should go out and buy the excellent and totally worth it book (aren’t we all just evangelizing for Dorie now?). Or you can come over to my house, because I still have a big bowl of them sitting on the counter.
Besides the muffins, my housemate (new housemate Christa–hello Christa!) made amazing Chocolate Chip-Oatmeal-Peanut Butter cookies from the Dorie book last night. They are sooo good. Our house is full of baked goods. Excellent for all the study breaks.
Now I have to go back to the library and attempt to finish my reference assignment. Maybe I won’t cry this time. (Seriously people, did you know that trying to find information using only print resources is practically impossible these days, even in the library? Jeeez.)
