When I was in high school I was a bit of a Francophile. Ok, I was a lot of a Francophile. I took French throughout high school, and most years our teacher would bring a buche de noel to share before our winter break. One year we even got to take over the home ec room and make one. I loved them and every year I think of making one again, but I never have. This year, for our library’s holiday party, our lovely admin asked me to bring a dessert. I poured over cookbooks and holiday cooking magazines before it hit me: Of course I had to make a buche de noel!

Whew. After a whirlwind week in San Diego with my family for Thanksgiving, it was kind of strange to come back to my small, quiet, still little house in Walla Walla. And also, it was cold. It is decidedly winter. And while I’m so not a fan of wintery things like frost and being cold, I am a huge fan of wintery things like squash and pot roast and sweaters and being cozy in my little house while the wind howls away outside. This pasta is perfect for that. It is also very rich. When I cooked this it was probably the first time I served myself dinner and couldn’t finish it. And not because it’s not good. It’s great, and I heartily enjoyed the leftovers. But be warned: It is rich. It might be best to serve this in small portions, with a crisp and light side salad.

Pierogies with Tomato Dill Sauce

As I near the three year anniversary of this here bloggity blog, I’ve been reading back over old posts. And I’m kind of embarrassed to admit how frequently I wrote things like, “This recipe wasn’t perfect, but I will definitely try to improve on it and let you know how that goes.” I’m embarrassed because I almost never actually tried to improve those recipes. When I first started learning how to cook, I had a real aversion to repeating recipes, and if something wasn’t memorably awesome the first time around, the chances of it getting another go were pretty slim.

Well, now that I know a little more in the ways of the kitchen, I’m starting to get more curious about those initially not-so-exciting recipes, and I think I’m finally ready to try to improve on them. I’ve decided that it’s finally time to start making good on all those promises, and I’ve started with this: Pierogi with Browned Onion, Tomatoes, and Dill.

Herbed Ricotta-Stuffed Chicken

When I first started this here blog, I cooked up a fancy dinner for my lady friend Crystal that subsequently stood out in my mind as one of the best things I’d ever made. It was the first time that I had a vision for dinner that didn’t come straight from the pages of a cookbook or a glossy magazine. I mixed tons of fresh herbs into some ricotta, stuffed it inside of some chicken, and topped the chicken with a light, tomato cream sauce that pulled it all together, and this recipe became my go to suggestion whenever anyone asked me for something easy but impressive to serve for dinner. But the original pictures I took for the post? Not so impressive. I always intended to make this again, with more appealing photographs, because I would hate to think this recipe would be shunned because of its seeming unattractiveness. Well finally, last week, I did it.

Spinach and Sweet Pea Pasta

I don’t need to say it again, do I? In Boston, our farmers’ markets are still a long way away. Things aren’t really growing yet. Eating locally without eating potatoes is still a distant dream. So, a message to all the food writers out there in happier climes: Stop taunting me with all your joyous greenery and ramps and asparagus and small, alive things poking their little heads out of the ground.

Alright, maybe I should just stop reading if it saddens me so much, right? Or, I can use the bounty of others as inspirations in these last, dragging days of winter here in New England, and create a light, simple, verdant pasta dish that lets me pretend like it’s spring, even if none of its ingredients are really fresh from the ground. As you can see, I decided to take the second course.

Who would have thought that the simple combination of spinach, chicken, and cream could create such a glorious dinner? Well, the Italians, obviously, because they are good at that kind of thing. I’m just baffled that it took me so long to realize it. I mean, I love spinach, I love chicken, and I am a sucker for anything in a cream sauce. How has this dish never graced my kitchen? And when can I have it again? It is truly a perfect combination of flavors and textures and all those other things that make food, you know, good. Er. Yes.

I saw the recipe in Giada’s Family Dinners about two weeks ago and it stuck in my head, floating around, taunting me. “You love spinach. You want to cook me!” But I’m a grad student, see, and I don’t have time to be at the beck and call of whatever recipes decide to tempt me. I had to eat frozen veggie burgers (don’t worry, I heat them up first) and macaroni and cheese and pre-made gnocchi from Trader Joe’s while this recipe enticed me and beckoned to my nonexistent free time. Well, finally last night I had some free time. And I only wish I’d made the time earlier, because this is one of my new favorites.

Lobster Ravioli in a Light Cream Sauce

Update! – This post has long been a popular post here, and I decided it needed a little update. I’ve added new, prettier photographs, and revamped the recipe a bit to make it easier to follow. This is a super simple cream sauce that is perfect with any kind of ravioli, really, and in fact, with any kind of pasta. This sauce is one of the first things I learned to cook, and I love it because it’s very fast and requires only a small handful of ingredients. If you’re looking for a sauce for Trader Joe’s lobster ravioli this is a great choice, because it really lets the lobster shine. Now, back to the original post.

Yesterday I got to borrow the housemate’s car and drive myself out to Trader Joe’s, one of my favorite places in the world and one I don’t get to visit very often, seeing as it’s not very accessible by public transport. Not only did I get to buy cheap vinegar, delicious marinated meat stuffs, and the above pictured lobster ravioli, I got to drive around town all day, revelling in the freedom and glory that is being behind the wheel of a vehicle. God, how I’ve missed it these past four years. God, how I wish I could afford to buy myself a little zippy car to zip around town in. Times like these I am forced to admit that I am a southern California girl at heart, wedded to herĀ  stick shifts and safety belts.

This afternoon of vehicular freedom was allowed provided I could transport Crystal to and from work–a guaranteed two hours’ driving time for me, but also a guaranteed late dinner. By the time we got home it was nearly 9:00 and I wanted something simple, fast, and light (it was very hot and sticky in our apartment).
