Frittatas are like the easier version of quiche. Just as much eggy goodness, no need to roll out pie dough. They make for a simple, quick dinner, and are perfect paired with a light green salad. You might be more familiar with the frittata’s role at the brunch table: I assure you, it plays well at any meal. What makes this such a stellar workhorse? You can do anything with a frittata. You can throw in whatever bits and pieces you have floating around in your refrigerator and chances are it will be delicious. Versatility is the name of the game.

Glazed Delicata Squash with Lentils
I usually start making dinner before Sean gets home. I stand in our u-shaped kitchen, and dig around in the refrigerator and the cupboards, pulling out this and that. Tonight’s dinner will be easy: only a few ingredients, and plenty of time to cook, no need to rush. I fill a saucepan with water to boil, measure out lentils, rinse squash. The knife makes its thwack-scrape sound across the cutting board as I slice. I’m calmed by these things, more than I was by my hour of post-work yoga.

Chicken and Chard Burritos
Sometimes on Sundays I peruse cookbooks and I start getting excited. I start making up grocery lists and weekly menu plans, and I have it all figured out. I know that Thursday, I’m going to make Chicken Escabeche with Carrots and Jalapenos, and wild rice. Then things happen. The market doesn’t have any acceptable carrots, though the shelves are overflowing with beautiful leafy greens. Thursday, which seemed like a perfectly lovely day earlier in the week, turns out to be kind of exhausting, and when work is over and I’m standing in the kitchen, I know I don’t have the patience for wild rice. I have to re-think my plans, so that I can get back on the couch for a little restorative bad television. Sometimes when this happens, I turn to pizza, or bread and cheese. But sometimes when this happens, I get lucky, and something wonderful manages to happen in my own kitchen anyway. This was one of those times.

You know when you bookmark a recipe but don’t get around to trying it for years, and when you finally do, you curse yourself for waiting so long to discover this new, most amazing meal? That’s what happened with this chicken. I saw this recipe on The Kitchn over two years ago, and Faith Durand, the woman who posted the link, was so effusive about its awesomeness I bookmarked it immediately. And then forgot about it completely.

Spicy Shrimp Causa Bites
I love potlucks. They give me an excuse to experiment with dishes that are time consuming or complicated or involve unusual ingredients, or all of the above. I love to feed people, and even better, I love it when I make something that makes everyone in the room excited. These spicy shrimp causa bites did the trick: I made these for a Fourth of July party (and yes, I’m aware that was over a month ago. I’m a bad blogger). People loved them: They’re unusual and full of flavor and are fun to eat. Sure they’re a little time consuming, but they’re totally worth it.

Fresh, Easy Pizza Sauce
In all of my experimentation with pizza-making, I’ve focused almost exclusively on the dough and the toppings. I worked endlessly to find the best dough recipe, and topped that dough with every kind of topping I could imagine. But when I wanted a traditional tomato-sauced pizza, I usually contented myself with buying a jar of pizza sauce from the market and calling it a day. Well, now that I’ve got my dough recipe pretty much down (I usually go for either Smitten Kitchen’s Really Simple Dough, or, if I want to bank some away in the freezer for the future, Peter Reinhart’s neo-Neapolitan dough from American Pie), I figured it was time to nail a recipe for homemade sauce. The good news? The sauce is WAYYYYY easier than the dough.

White Bean, Tomato, and Chard Salad
I never really thought to eat chard raw, but the stuff I’ve been getting from the CSA is so tender that last week, I decided to give it a shot. Admittedly, this isn’t entirely raw: The bean and tomato mixture was hot, and wilted the chard a bit when they were tossed together. But it still held onto some crunch, and with the addition of cabbage, this salad has a great combination of textures. And the flavor was pretty amazing. In fact, I hadn’t intended this to be a blog dinner. It was just a quick weeknight meal, thrown together from what was in my pantry, but I was so pleased with how it came out, I had to share.

Spicy Citrus Shrimp and Spinach
I don’t use a lot of citrus in the kitchen, though I have been eating clementines nearly every day this winter. I don’t actually use a lot of fruit in my cooking at all. Fruit is sweet and therefore my savory-loving self has a hard time intuitively understanding how it fits into dinner. But when I saw this recipe for Grilled Shrimp with Citrus-Sambal-Oelek dressing in April’s Food & Wine, I was intrigued. The idea of something bright and spicy is very appealing this time of year, when summer taunts at every turn. What I ended up with was slightly different from the original recipe, based on what I had in the kitchen, but holy moly, it was so good I think I’m going to try introducing citrus to my pots and pans more often.

Spicy Spaghetti with Fennel
From the moment I saw this recipe in January’s issue of Bon Appetit it went on my list. I don’t usually eat a lot of fennel. It doesn’t occur to me to pick it up. But the photo was so alluring, and I’m a sucker for a big ol’ bowl of pasta. It sounded different from my normal cream-heavy pasta dishes, so I had to try it. And wowza, it was amazing. A touch of thick-cut bacon, fennel braised long enough to become silky and rich, and just enough spice to keep things interesting, and I was hooked. You probably will be, too.
